Appearance
This thing is a unnatural color that I can only describe as electric teal. The pie appears to cut well and has what looks like a sweet crust shell. The whipped cream was piped neatly around the edge forming a nice ring. I mean it's a basic pie. There isn't much else I can do to describe it. Did I mention how unnatural the color is?

Texture
It's essential a curd/custard style pie. This made it slightly difficult to cut and I think you could probably have it even if it was still mostly frozen like an Icebox pie. The crust is a sort of graham cracker style that is very similar to a no bake crust. I am sure they blind baked it before filling but it's still very crumbly. That's really the biggest complaint I have so far. Combined with the soft curd, the pie really struggles to hold its shape. Mouth feel is overall quite pleasant though. If you can imagine the texture of a chocolate silk pie, this is nearly identical but just a touch lighter.

Taste
This is what we are all wondering. For reference, Baja Blast is described as a tropical lime soda so that's what I was looking for going in. The first taste is quite sharp on the tongue and the experience is magnified by the coldness of the temp. It's less lime forward than I expected though. The lime flavor is a little generic with a tropical finish. I get hints of pineapple and other citrus fruit. I would compare it to an extra tart key lime pie that has softer tropical notes. I really feel liked they missed an opportunity here to do some fun with the experience. While I think it's fair to say its a tropical lime flavor it doesn't evoke the Baja Blast soda. I would have liked to see some citric acid/baking soda granules mixed in for effect. That's what is often used to give candy that "fizzy" taste. Its definitely trickier when considering the high moisture content, but it's possible. Even something like coating the outer crust or dusting the top of the pie would have really tied the whole soda flavor together.

Final Thoughts:
Don't get me wrong, this is a good store bought pie. If it weren't for the color and name, you could pass this off as a key lime curd pie with ease. The crumbly crust and lack of follow through on the soda vibes is what really left me wanting more.
