Looking to use up some more of my ground venison and I figured chili would be a good thing to try. Anyone here have some great recipes?

I make the World's simplest chili.

3 lbs meat browned
2 chopped onions
1 quart water
3/4 cup chili powder
2 15 oz cans tomato sauce
Garlic powder, cumin, paprika to taste

Brown meat with onions. Add water. Bring to a boil. Gradually add chili powder, garlic powder, cumin, paprika. Add tomato sauce. Simmer for at least two hours (the longer the better).

California man-girl chili has beans. If you put beans in deer chili it's no longer deer chili. IMO

WTF?!?!?!?!

I will never, and I repeat never make a pot of chili with beans. I will make beans with meat in them, but I don't call it chili. If you want a recipe for beans with deer meat, I'll happily provide one of those as well.

My wife made venison chili last week. It was so strong, meaty tasting (hard to explain). My son and I agreed that it was good, but would taste better with beans in it to mellow out the flavor.

Beef chili is a different subject. See CASI website, with recipes from the last ten or so years worth of winners.

I would have given my 6 ft 2 in, 210 lb 16 year old a man card just so I could take it back, but then since I wanted beans in my venison chili, I don't have one to give!

It would be funny to carry a MAN CARD in your wallet..... pull it out and ask someone..."Do you have one of these?"...."I didn't think so."

Real Chili is MEAT, no beans.

Ha, actually throw that water out and make that a half quart of beef broth and the other half beer.

Allen, soak the venison in buttermilk overnight. That draws out a lot of the gaminess, especially if the meat is off a buck.

I made venison chili a couple of weeks ago using a bag mix my brother gave me for Christmas and added a few extras. Was good, but spicy. The kids liked it too, but need to moderate the heat next time. I want to say the mix was just called "Texas Chili Mix" in a small brown bag with a white label.

AND, no beans EVER in my chili.

Contrary to popular belief, soaking your venison in buttermilk does not reduce the game flavor that people complain about. What causes a strong game flavor is usually overcooking or over browning your ground venison. I learned this from Jeff Blank - Owner/Chef at Hudson's on the Bend. Since then I have looked at cooking venison and all wild game very differently.
The issue is the fact that there is almost no fat in wild game and browning like you would ground beef does not enhance the flavor - quite the opposite. To help fix this no fat thing, add a bunch of olive oil to your ground meat and work it in with salt and pepper (if you prefer). I usually add something on the order of 1/4 cup per pound. Also, don't over brown your venison. I usually just "brown" mine until I don't see any more red and then start adding liquid. The venison is going to cook over that 2 or so hour simmering period and the flavor will get better and better as it cooks, absorbing the flavors from your spices.

Putting beans in chili is left-wing, communist and makes baby Jesus cry. Please don't make baby Jesus cry!
