Butchered a show pig last week…..

I bought 1 of 6 show pigs butchered last week. In addition to the meat I have 2 heads and 6 trotters. Plan on splitting the feet and smoking them and vac sealing for beans etc. I ended up with two heads. One I plan on boiling out for head cheese, but have never made it before. Anyone have any do's or don'ts? The other head I think I'm going to bone out and make guanciale from and throw any other meat in my trimming bag. I also have 10lb of skin for chicharrones. Never made those from scratch before either. Would love to hear any recommendations. Xposted to food board as well

I bought one too, neighbor kid in FFA raised a pig and named it Jimmy Dean! Had it processed at Bellville Meat Market (I was limited on options to process it at) and I pick it up next week. He looks delicious!

We buy multiple animals from our country fair every year. I would definitely recommend finding somewhere to feed out the pig for a few weeks. We noticed when we didn't do that the ended up way too lean.

This. We made that mistake once. The sausage was barely edible.

You need to feed them out for a few weeks.

Made that mistake with a show steer, will never do that again. Idk what the history was with this batch. Had some ribs that we left the belly on last night. They were great.

Friend of mines girlfriend was telling a story yesterday about raising pigs when she was growing up. When their sow had a litter of pigs they would sell all the babies once they were weened except the runt. They would raise the runt (usually having to bottle fee it)and eventually butcher it or have it butchered. So she knew they were going to eat it eventually, but she helped with feeding and raising it so she didn't want to be their for the killing. One day when she was about 8 or 9 she came home from school and opened the door to the refrigerator to get a snack and staring at her was the pigs head. Her dad was going to make head cheese with it. I can just imagine the surprise at that age to find the pig you've been raisings head in your fridge.
