My wife bought/ cooked these the other day. We raise cattle and have a freezer with sirloin and T-bone steaks left from the calf butchered last summer. But she prefers tenderloin…
Just hoping the calves are still worth $2,500 plus when ours are big enough to sell in August/ September. Tempted to sell a load of 4 wts now.

Outside of bacon or tender loins the average consumer doesn't eat much pork. Yes, we're more aware of pork chops, pulled pork, country style cuts, and pork belly, but nationally that's not really the case.

Chicken is what most fall back to to save money. Expensive chicken is still generally less than $3/lb.

There's also a shift to seafood as it isn't nearly as expensive on the higher end of the market when beef prices explode for those with a little more wealth.

You can find leg quarters on sale at HEB often for $0.99/lb. Stock up when they do; it's the cheapest protein out there.

Tha average difference between a 400 lb and a 600 lb steer is about $500 at current average market prices. Is $500 worth the extra time on momma cows, grazing pressure and extended risk that stupid animal will find a place to die? Obviously depends on local conditions.

Every bite I take of a snack stick or backstrap is about $4.50

The two cow elk and couple deer we shoot in CO get cheaper by the day when I think of what I spent many years ago on leases.

Two months ago I bought 1/2 cow of Wagyu beef for just over $2000. Filled up two large stand up freezers. I'll never go back to grocery store beef. This is the only way.
