We used to eat this back in the day when Ginas was still in business(Mexican food place off of Groesbeck). Im trying to find the recipe for it and if anyone knows how to make it please reach out to my username at gmail.

No help here, but if you find it, I want in! Beef fajita, some kind of cheese and jalapeno, it was delicious.

I miss that dish and place.

There's ALOT of people wanting this dish, myself included! I really don't understand if you aren't in business, not going to be in business again, why you don't share recipes?

On cold days it was almost as good as my grandfathers chili. I miss Ginas something fierce.

I've tried making it over the years. Good tenderized fajita meat, a good melting white cheese, milk and sliced fresh jalapeƱos seems pretty close.

I have potentially good news for you. I am friends with Hector, the former manager of Gina's. He makes a batch of it fairly regularly and offers it for sale and pick up. If you want to reach out to him you can get on the list. bighbryan <at> gmail.

Wow. Intrigued. Caldo de res, which I love, is pretty mild. I want to know more about one called "volcan!"

It really wasn't a soup or stew but meat in a cheesy liquid. You spooned it onto tortillas and it made a glorious drippy mess. Or it least that's how it worked when I ate it.

Yup! A big bowl of cheesy beefy deliciousness with fresh jalapeƱos. So good.

Queso fundito swimming in broth with meat juice and maybe a milk base. It was white and opaque. Maybe it was liquid off the cheese and water and beef juices.

It's damn tasty and that is why we need the recipe.

I have ordered Volcan (and both red and green sauce) from Hector over the last couple years. Amazing every time except once, that time was still good. Email me user name at yahoo if you want his phone number. Usually about $200 for enough for about 8 adults. Pick up behind the old Gina's off Grossbeck

This one of my regular orders at Gina's and I'd love to be able to make something close at home. I've never seen anything similar on another's menu.
