I still have some butcher boxes for sell from my son's show steer. It was grass and grain feed so best of both worlds. We used only the most expensive hay and feed sold at the co-op. He had free choice Sudan and 30-40 lbs of "grain" a day for over a year. Packages are vac sealed so they will last a long time.

I'm not going to get in the middle of the grass/grain debate. But if you just want some good tasting beef, as mentioned on another thread, I've had a steak at just about every overpriced steakhouse there is and nothing comes close to a show steer steak. No producer will ever feed as much high quality feed as a 4h project....and no producer is going to baby a steer like a show steer (no tough muscles on these spoiled beeves).

We spend $2500-3000 per steer just in feed for a year. We aren't trying to make any money off these. Just trying to free up room in my freezer, share some good meat with friends and maybe cover a little butcher cost. I use the prices posted at my local butcher to price out each box based on final weight of each cut.

Boxes are ready now. Stored at my place in north San Antonio area. I have put the cuts in packages ranging from $250, $300's to $700's.

To price out the cuts, i'm applying the per lb price advertised at my local butcher (I'll add pics in edit).

Also, note cuts are thick and well trimmed, beef was dry aged for a month, and packages are vac sealed.

One more note, every box comes with a certain portion of ground. That's just the nature of butchering a cow and how the butcher boxes are put together. If someone shows up and wants to buy a significant amount of ground, then i might be able to do some steak only packages. That being said, even the ground taste significantly better and you won't be disappointed.

Damn, I would love to be interested in ribeyes and ground. But not sure I can partake at those prices. If something changes, I'll let you know…I'd love to be in.

Are the ribeyes already cut? If so, how thick? Whats the weight in average? If they aren't cut, can they be cut a certain thickness upon request?

Yeah that's why I posted those prices. I think some guys were getting the impression we were selling Walmart cuts here.

Although, I think it's a fair price for the quality. I'm not looking to make any money here either. We'd have to charge three times that to just break even on the project.

I will be in for a box. If you got something packaged up with some ground, a brisket and a couple portions of really any steak cut (filet, ribeye, strip, sirloin). my thinking was 100-150 in ground, 100 for the brisket depending on size, and another 100-150 for steaks. $300-400 box. Open to what makes sense for you to throw in to get to that amount
