Personally, I would look at Palm Springs or Scottsdale if you don't want anything winter wise. Always could do San Diego as well.

San Diego was brought up lightly.

Im not opposed to snow at all. I just won't do any skiing

The golf tournament is in February in Scottsdale. It will be very busy.

It's one week at the beginning of the month and mainly affects North Scottsdale. Plenty of time and room to work around it.

Adults only or kids?

Branson is always a good option for kids.

St. George, UT. Perfect time to visit Zion and Bryce Canyon. One of the few times all year where you can drive your own car through Zion and don't have to wait on a shuttle

Was going to suggest the same. But don't sleep on all the great hikes that will be way less crowded than the national parks and allow you to enjoy nature a little more. Plus lots of good golf and dune bugging at sand hollow.
Here are some non national park pictures from this winter.

Agreed. We loved hiking Red Cliffs. Valley of Fire in Nevada is another one that is very underrated

not sure what all you want to do, but the wife and I went to Chicago one February for a random last minute long weekend trip. We thought it was great. Obviously it was cold, but low crowds, cheap flights and hotel. It was fun for us.

Basically hung out downtown. Went to a couple of the famous pizza places, had a couple nice dinners. Went and saw the bean, walked the lake front there, strolled/shopped the main drag downtown. Ice skated, old Frank Sinatra jazz club one evening. Bulls game.

Nothing too extravagant but it was a good break for us from the kids and my wife and I just like strolling around and popping into whatever catches our eyes.

You say no skiing but what kinds of things does this group of people enjoy doing?

It will just be me and my wife. We are open to anything, we just don't want to skii. I have too many health issues currently for that.

Right now we're considering: Oregon coastline, Islamorada, Florida, or a snowy cabin somewhere.

I'd be up for a snowmobile
