I'm glad someone finally said The Beehive (Ft. Griffin General Merchandise when I lived there) but it is more fine dining than diner. Get more "diner" feel in the Big Country from Woodson Cafe, Joe Allen's, and Mary's.

As for the rest of the state, some favorites:

Doyle Phillips and Bluebonnet Cafe in Temple (both gone, R.I.P)

I had Cooper's BBQ @ the stockyards location. I was not all that impressed really. I know it has a following, but I actually prefer Hard 8 BBQ.

I also prefer Joe T's over Chuy's, but both are good.

I'm surprised no one has said K-Bob's, any location.

Actually, I've only been to Mineral Wells and Childress, and have no particular memory of either.

Willie Joes - Freeport TX. Can literally pick anything on the menu and walk away with a smile on your face. Absolutely awesome seafood.

Joel's BBQ - Luling, TX (Exit 661 to be exact). Love their sausage wraps and stop by there every time I drive by on the way back to Houston from SA.

Seabrook Classic Cafe - Seabrook TX. Awesome old fashioned breakfast with a great atmosphere right on Clear Lake.

Blessing Hotel - Blessing, TX. Best breakfast you will ever eat. If you are worried about your cholesterol, don't stop by here, because they haven't changed any recipies since Shanghai Pierce was running cattle in the area.

Wurst Hause - Lake Jackson, TX. Best sandwiches in the world. Glad they re-opened.

Hans Mongolian BBQ - Webster, TX. Not really BBQ, but awesome stir fry that you get to customize however you want. The place isn't much to look at, but the food is outstanding.

Taco Tony's - Eagle Lake, TX. Use to have really good breakfast tacos, but haven't been there in 15 years or more now, so can't speak of the current state of affairs.

Lexington Livestock Auction cafe has some damn good comfort food on sale day.

My favorite in my area is Murphy's Steakhouse in Winchester.

- The original Dixie Diner in Texarkana, AR is/was home cooked wonderful.

- Don Bravo's in Cuero has the best greasy Tex Mex that I can remember eating.

- Outriggers in Seabrook has the best fish tacos

- T Bone Tom's in Kemah makes the list for the chopped brisket stuffed deep fried pickled jalapenos.

- TLC in downtown Texarkana has the best french fries I've ever had.

- Best fried catfish is a tie between Pier 27 in Doddridge, AR and Vaughn's in Linden.

- Best Sausage - the now closed Black's Grocery in Liberty Eylau, TX. I have been trying to get them to give me the recipe since they closed. It is the best whole hog sausage that I have ever eaten, and nothing else even comes close.

Branding Iron BBQ in Wichita Falls...just because they have smoked bologna, and it was damn good. It has been a few years (12) since I went, so may have gone downhill since then.

I can't believe that no one has seconded my post on Leona General Store. Their 14oz ribeye is 20oz easy. I also like that it is a BYOB place. Wifey and I can pull up with our own bottle of wine, get full on ribeye steak and be out the door for under 50 bucks including tip.
