I remember it being where los cocos is in Culpepper plaza in the 1980s. Does any remember about when it was there?

I definitely raised that flag a few times when I was a kid which would have been in the 1992-1996 (10-14 y/o) range.

My oldest definitely remembers Pancho's and he was born in late '94.

Probably about 20 years ago, there was a Pancho's on IH35 in Round Rock. It was the best one I had ever been to. All the standard dishes were very good and they had a few items I had never had at a Pancho's. So drove over on a Sunday afternoon and got there to an empty parking lot, except for a few employees milling around. One came over and told me they found out when they showed up for work that the place was closed for good. Knowing there was another Pancho's in south Austin, decided to go there. And it was better than the Round Rock location! So when the manager came by and asked how things were, I told him his Pancho's was the best one I had been to. And told him about the Round Rock location. With a pale look, he told told me that store was owned by the same people as his and he had no idea anything was happening.

Defunct Post Oak Mall Eateries: According to an insert when Post Oak Mall opened, Chick-fil-A and Corn Dog 7 opened as well as the following eateries: Funnel Cakery, Giovanni's, The Great Hot Dog Experience, Ken Martins Chicken Fried Steak (looks like that venture didn't go too well), Peanut Shack (it's actually a candy and nut shop that still seems to exist in forgotten places), Pepe's, Potatoes Etc., Salad Bartique (that is how it's spelled), Seafood Shoppe, and Sesame Hut.

Also, McDonald's, Orange Julius, and Subway had presence as well.

T-Bone Jones was a sad loss, but you couldn't find it unless you were looking for it after they redid University.

I wasn't sad to see Pancho's (where Los Cucos is now) go. Pancho's had these creepy sun masks all against the wall. They gave me nightmares!

Wasn't there a Casa Ole in Post Oak in the late 80s? i'm not sure of the name, but I remember the green sauce.

Don't forget Luby's (I think). It was down by JC Penney's. My grandmom would take me there for lunch when she would come to the mall to shop.

Charlie Stover had a hamburger place in the POM food court (maybe where Sonic was for a short time and is now Charley's Cheesesteaks?). I believe he also opened a healthy salad-type place as well.

Chelsea Street Pub & Grill was where Chuck E Cheese is now.

Piccadilly never had a College Station/Bryan location, they were in a few malls but the last closed in Houston closed a decade ago somewhat abruptly (there are still soft drinks in the cooler). The one in the mall was originally Wyatt's Cafeteria, then closed and became Bishop's (under Wyatt's, not Furr's), then they sold a bunch of restaurants to Luby's (including that one), which ran it for a few years before closing. An excellent timeline of the mall can be found here.

Flip 'n Peel was CMac's place in the mall I believe. Still made the best turkey burger ever.

Wyatt's feels right. It's been a while. That was early 90's I believe during my first retail job after high school at Sears.

Flip & Peel was it.

We used to get the funnel cake at Corn Dog 7 when I worked at Champs. Good 10-hour shift food!

Quit going to Casa Ole in the mall when we saw the waiter eating chips in the alcove while dipping them in the bowl they dipped everyone's red sauce out of. Nope...

Chelsea Street was a good after work stop for a drink and some karaoke.

I was part of a focus group at one point of mall store management when they discussed moving the food court to the area by JC Penney to attract more foot traffic

I was the assistant manager at the Subway at the mall in 1993 or 94 while doing my pre-med. It was so friggin busy during Christmas time. My girlfriend (now wife) always complained I smelled like cold cuts after work.

My most memorable Pancho's visit was when I was 8 or 9. Had some Flamin' Hot Cheetos that afternoon as a snack. Then we went there as a family for dinner, and I had lemonade to drink

Let's just say that those two didn't mix very well

Swenson's was awesome. Loved the arcade that was just down the way. Maybe where the eyeglass place is now.
