What causes my freezer to defrost?

Except for some ideal chest freezers that keeps things fresher longer ... they ALL self defrost then freeze again.

Is it supposed to defrost? My deep freezers are not self defrosting. Some are and those are either on a timer or another protocol that will be manufacturer specific.
