I find this thread very interesting. I do think Craft BBQ is a marketing tool, however there is a huge discrepancy between most of the BBQ places in Brazos Valley and say Aaron Franklin or Goldies.

The level of taste/quality are miles apart. But some people I guess don't notice?
if it is miles apart, not sure how they wouldn't notice.

I like C&J. I always get the rib plate and they have always been solid.

As others have pointed out they have great sides.

With regards to brisket pricing. It's gotten silly bc that's the crap portion of the steer. It's supposed to be more reasonable.
Not as silly as the price of fajita meat. Talk about the crap portion of the steer.

For those complaining about the price of BBQ, look at the price of a whole packer brisket at HEB. 4.99/lb for prime usually. I usually lose 40% of that weight between trimming and cooking. So true cost of just the cooked meat is closer to $8. Then got overhead, salaries, wood, rent, and you gotta make some profit.

If it's too much I get it. Everyone has a point where it becomes too costly, but it's not like these folks selling BBQ out of a trailer are rolling in their cash each night or something.

So $2 for meat on the sandwich ? $1 for bun, pickles, oninons, sauce ?

Rudy's is getting close to $10 for a sandwich

233% mark up sounds like there could be just a little profit in that sale

In junior high in Lockhart, we had open campus lunch. We would run three and a half blocks to Blacks, where for a dollar and a dime we could get a barbecue sammich and a soda water. Then run back for fifth period.

Somebody help me out, what exactly is "Craft BBQ"?

Craft BBQ is a term coined to try to attract the attention of Texas Monthly. And if that doesn't work, serve a side of green spaghetti.

Never mind. I'm just happy to see 1775, coopers, and others find success. Hope the new bbq place succeeds as well

I agree, that's another one where they have escalated the price.

Reverse snobbery is a good term. The whole Prime brisket thing is the highlight of it. You don't need prime brisket. But some want it.
There's a place in Cameron called Hecho en Texas that makes good BBQ. Went there a year ago and it was 4.50 per 1/4 lb, so $18 a lb. Went back 2 weeks later, they upgraded to McClaren Farms prime and went up to upper 20s per lb. Haven't went back since because I'm a cheapskate.

No, they're too busy arguing about barbecue and the definition of "craft".

Also, it opens tomorrow.

Some of the best BBQ around that a lot of people know nothing about is What's The Deal BBQ out on highway 21 East about 1/2 mile from Hwy 6. They used to be in a food truck on Hwy 6 in N Bryan, and not have their own storefront, Good stuff,

I always forget they moved out that way. I really need to stop by them on my way back to Caldwell soon.

They fill you up for a decent price and the mac is delightful. Think they do brisket plates for 12.99 on Wednesday, chicken plates for 9.99 on Thursday, and rib plates for 11.99 on Friday. 1/2 lb of meat and 2 sides for the price of a decent burger nowadays.

I usually get their rib plate and it's always decent. I have noticed the stuffed baked potato looks like a meal for two. If I'm in a hurry I will just get a couple sausage wraps.

Dickey's is McDonalds

Rudy's is Chili's

C&J is Walk Ons

Coopers is Saltgrass

1775 is Republic

Snow's is on a level that doesn't have a comp in B/CS

And every one of the above are ok and fine for what they are, but the hardos who try and act like ribs and brisket from Snow's isn't that much different than a chopped beef sandwich at Rudy's or whatever crack me up.

EDIT: Actually Dickeys and McDonald's aren't fine. Get rid of both.

More likely they haven't had good BBQ and think Jerky is the same.

I made the comparison I did for a reason. Though SG has gotten better about it and Bubbas is making a run for it.

I did. I thought the pork ribs were very good. I'm a little tired of brisket by now (I prefer beef ribs) and am probably not the right person to judge but I thought it was fine. For a point of reference, I think 1775's brisket is fine too and I don't like C&J's. I am by no means a barbecue connoisseur.

Their BBQ sauce was good. You only get a tiny side of pickled onions with your order, bread, some sliced pickles, but no jalapeños (I don't know if I was supposed to request them). I don't know what kind of bread I got with my order, but it was better than plain old white bread.

They really need to streamline their ordering process though. There were a dozen people ahead of me when I got there, and it took almost an hour for me to order and get my food. I believe they had three people working inside the trailer, but somehow it still took them five minutes to serve each person. I was willing to give them a shot because I was curious but I'm not gonna wait around an hour next time.

We went here last night and everything was excellent. Meat and sides.

Maybe my only critique (more of a preference maybe) is that their sauce is pretty sweet. I don't use much in general with my bbq but there I didn't use it at all.

Ya just can't accurately assess any place (other than a chain like Bubbas) until the "shakedown cruise " is over. Two months minimum.

Cooper's it's 100% vinegar based. They also use it as Mop.

Cooper's, Rudy's and C&J's work for me because I can sit inside the A/C and eat with family or group or whoever.

If I wanted to sit on a picnic bench outside, I'd cook bbq at home and eat outside!

I've eaten at Snow's several times and their brisket is by far the best I've ever had. It is so moist and tender that I sometimes wonder if they are cheating and using some other cut of meat.

But their sides are pretty average.

I sometimes wonder if I'm living in an alternate reality, or maybe if Snow's food enters some alternate reality whenever it passes into my mouth.

Because I have never understood how anyone can truly think it's top tier BBQ, other than getting enamored by the fact it's an old lady cooking it, or maybe some bizarre childhood trauma caused the smell of cow manure from the auction barn to trigger an odd nostalgia that people crave.

I have eaten Snow's in the double digits of times - to me it falls in C&J tier.

So he goes to a place in Lexington Texas open one day a week double digit times and thinks it is C&Js level??

Why bother going that many times?? Try someplace else
