I had to read this a few times to make sure that I really understood what it said.

Snows is by no means on their worst day in the C&J tier. Snows and Truth and Brenham are far and away the two best bites of brisket that I have ever had.

C&J has days that they are on par with Rudy's and days that they are on par with Coopers. They are never in Snows tier. I will go to Nikki & Lamars for BBQ before I go to C&J.

But to each his own...

To be fair, I never eat C&J brisket, because it's bad. And I'm a guy that typically judges places about 80% by their brisket.

But C&J's ribs are 100% my style and their chicken is good. C&J's is probably stylistically a good fit for me (savory, not sweet chicken, dry rub ribs, etc) so while Snow's and C&J's are very different, that's why I put it that way.

When Cooper's is ON, they're far better than Snow's in my opinion. As many others have commented, when Cooper's is off it's like you're the cow - licking a salt block.

Again, maybe I've just been bizarrely unlucky 10 times in a row at Snow's. But to bring it back up to one of the original comments at the top, Snow's is probably one of the best true Old School style BBQ joints that didn't come around to incorporating Craft BBQ technique and intentionality. And I'm not eating Old School BBQ for where it's priced. There are too many options. For me it's either cheap BBQ if I'm dieting, Craft BBQ if I'm willing to splurge, or my own stuff.

With regards to brisket pricing. It's gotten silly bc that's the crap portion of the steer. It's supposed to be more reasonable.

They will change to the level of what people will pay,

There's only so much brisket per cow though. Oxtails used to be cheap af, then got "discovered," and the price shot up because cows only have one tail (for now).

Don't expect brisket or beef prices to come down anytime soon; lots of stories about reduced herds, etc.

Things might pick up but in the meantime, tough time to be in the BBQ biz.

Bbq opinions are fun to discuss

Sort of like different men have different tastes in women… it is ones own preference or taste so it is not wrong. And Thank God for those differences


My personal Gold Star Brisket and only Brisket considerations/preferences are represented on this list

All basically equal- Stiles Switch, Truth, 1175, Pinkertons

Silver Star- Snows, Coopers (Llano location) Mueller's (its falling down the list) Pit Room

Several others i really like - Franklins, Opie's, La Barbecue, Goode Company

Many, many others but those are off the top of my head.

Gosh, we in Texas are blessed with an abundance of solid options .

I will say Mueller's and Coopers -Llano holds a special place in my soul simply because that is what I was raised on. Many a morning coffee was drank in Mueller's growing up by my grandfather and father. Late 60's early 70's it was the morning gathering spot for all the local farmers. Mr Mueller would give me a sausage wrap for breakfast .

The family had a ranch between Tow and Llano, so many a plate of bbq were had at Coopers. Coopers cabrito was off the charts good back in the day.

Bbq makes me happy

Bottom line is…..1775 is hands down the best around here. Then I'd maybe go to C&Js. I've only been to Coopers once and have zero desire to go back.

Made it to Truth BBQ in Brenham today. Had their brisket and Turkey. Solid

Potato salad was also great. Pinto Beans OK
