Our cabin is on a golf course and we're replacing some windows. What do we need to be looking/asking for? One quote has a coating that claims it'll do. Doesn't it need to be special glass?

Depends. Will I be playing on this golf course?

If so, your windows are doomed no matter what.

Are you able to go and dig a small pond directly across the fairway from your cabin? In my experience, the gravitational pull from a body of water is greater than any other force on a golf course, causing every ball I hit nearby to be pulled in.

Safety laminated glass better than its cousin windshield glass
that comes in $$$$ quality options

We use the high dollar stuff on museums, banks, et al, for "as they say"
by the time the burglar finally breaks through it, law enforcement has arrived

There's a high-wind tempered glass, that in smaller panes like 2x2ft have survived a framing hammer test that is an EZ option on most standard windows & sizes

Other defenses involve jail-like bars, mesh, BBQ grills that is hard to sell.

Best defenses are evergreens that can slap down a driver ball looking for trouble.

Some use a vicious dog that "trains" golfers to concentrate on their swing to stay far away or use cheap "water balls"

I don't suggest the exterior plastic "curtains" that defend the glass behind them.

One golf vacation saw vertical arbors mounted to deflect/catch a certain direction of incoming missles

There are impact windows, lot of houses on the coast have them. Don't need to board up for hurricanes. Something like they withstand a 2x4 at 130mph.
Yes, they cost more.

Just get regular windows and a relationship with a good glass shop. Probably cheaper to go standard glass and replace when needed than to spend high dollar on glass the "might" break less.

But that golf ball could go inside your house if it breaks. If it bounces off your glass my ball may end up in bounds. You have to think of the golfers. We need brick and roofs that will encourage a wayward shot back onto the course.

From somebody with your user name, I'd expect a transparent aluminum joke.

This. We live on a golf course in SW Florida and have had two windows broken in 6 years. The cost to replace the glass myself was about $100 all in, per window, for 29" x 34" glass panes, beading, silicone, etc. For a glass or window guy to do it, about $250 for one window, as of two years ago. Hope that helps.
