Anyone make a good tender Swiss steak? My Mom called it Spanish steak growing up. It a comfort classic for me. There's lots of recipes online… help?

I haven't made it in forever, but mine was always very simple. Dredge the meat in seasoned flour, and pan fry it in some oil. Once they're golden brown, remove from the pan, and pour off most of the oil. Add a large julienned onion and a couple of cloves of slivered garlic. Once the onions are lightly golden, add a can of whole tomatoes. Once they soften some, get after them with a potato masher. Add the steak back in, and some water or stock so the liquid is about halfway up the sides of the steaks. Simmer them on low heat until the meat is tender, usually 30 minutes to an hour. Remove the meat to a platter. Reduce the sauce if it needs reducing, and pour it over the meat. Consume mass quantities.

Funny, I had not made it since my kids were a little and about 3 weeks ago my oldest son asked for "That steak thing you made us when we were kids with a tomatoey gravy". It turned out great once again. HTown's response is sufficient for a recipe although I used stewed tomatoes

My grandma always used cube steak.
But we had a ton to feed.
Did grow the tomatoes, garlic, and onions though.

I like it but rarely make it.

My mom use to make that all the time when I was a kid, but we called it Smothered Steak. I'm going to have to look up her recipe now.

I remember eating this as a kid but I don't remember it having tomatoes. Maybe I'm thinking of Salisbury steak.

My grandfather used to make his in a pressure cooker, I still have and use his pressure cooker (probably from the 50s) and have made a Swiss steak similar to FIDO's recipe. Serve it with mashed potatoes and green beans just like he did.

I haven't made it for a while, I may have to do that soon.

Weird. Just last week my wife and I were talking about Swiss steak and that neither one of us have had it since we were kids.

So now we have to make it.

Man I haven't thought/heard about Swiss Steak in decades…That was a staple in my youth back in the 70's! May have to whip up a batch here soon.

I had never made it and this post made me want to try it out. It was something I grew up eating as well. Glad I made it when the kids were out of town because I don't think they would have liked it. And I also made the mistake of doing rice instead of mashed potatoes.

Made this a couple of days ago using Alton Brown's recipe. Brought back a lot of memories.

Probably should have let the steaks simmer a bit longer but otherwise it was really good.

Sounds like Swiss Steak is making a comeback! How exciting! I haven't had it since I was a kid, too. Well over 50 years.

Likely because it's a cheaper cut of meat and beef prices are through the roof at the moment.

My mom did it pretty much the same way but used cans of crushed tomatoes. Served with mashed potatoes. Now I am going to have to cook that this coming week!

Semi-followed the Alton Brown recipe last night but used cubed steak since it was on sale and saved some time. Good stuff!

I didn't let it braise long enough for it to be fully tender but it was still good. Seems like it might be something good to make in the morning and then put in the slow cooker for dinner instead of oven or stovetop.
