My only contribution here is to say that more people should try making ice cream at home. With very basic ingredients, zero cooking skill, and minimal effort with a relatively cheap piece of equipment, you can get results that are better than the vast majority of commercially produced ice creams. Also it's more fun because you can make whatever flavor sounds good and play with creative ideas you probably can't buy anywhere.
