Philippians 2:10-11 says that every knee will bow and every tongue will confesses that Jesus is Lord. If we had the ability to reject God, surely there would be some holdouts here? The bible is clear that everyone will ultimately submit. If no one can reject God in the end, is it really a choice to love God?

Universalism doesn't mean hell is a trivial process. There is still weeping and gnashing of teeth and burning flesh in the lake of fire for who knows how long. Even if you take the lake of fire as a metaphor, the purpose of the metaphor is to describe something of similar intensity.
