I was in the mood for some cajun smothered cabbage last weekend and went a little off the rails on the recipe I was following and might have stumbled into something...... I dont know if this dish is a thing, but I am calling it Creole Cabbage Gumbo and it will be a staple in my house moving forward:
Ingredients:
1 Head of Cabbage
2 large links of smoked sausage
2 lbs of smoked turkey necks
2 lbs of large shrimp
32 oz chicken broth
28 oz Rotel Mild
1 yellow onion
1 green bell pepper
4 stalks of celery
1 heaping tablespoon of Savoies Roux (or you can make your own)
Cut up your smoked sausage in 1/4'' thick slices. Brown the sausage down in your pot. Once browned, set aside. Dice up the onion, bell pepper and celery. Cook the vegetables longer than translucent (want these to disappear in the dish). Once the vegetables are cooked thoroughly, add in the roux. Cook and continuously stir for a few minutes. Add in the chicken stock, rotel and smoked turkey necks. Bring to a simmer. Let simmer for around 2-3 hours (add water as needed). Once the turkey necks are tender, add in your browned sausage and cut up cabbage. Cover and let cook until cabbage is almost tender (around 30 min). Add in your shrimp 10-15 minutes before serving.
My family loved this. I got a little crazy with the Cajun seasoning & cayenne in mine so it was a little spicy for the little ones but it was fantastic.
