Ended up spending yesterday making Red Carolina Hash. I didn't know what it was until my girlfriend invited me to their Christmas cookie bake last year.
Smoked a 4.5 lb pork butt along with 1 lb red onion and 3 lbs sweet potatoes. I put a pound of chicken livers in the crock pot in bone broth for a couple hours until they shredded. Mixed water, ketchup, mustard, brown sugar and apple cider vinegar then added the livers, onion and sweet potatoes. I began reducing and used the emulsion blender to puree everything then began to reduce while the pork butt rested. I kept the barky pieces off to the side to make pulled poke sliders and ran the remaining pork through a food processor doing a pulse chop so it didn't get too fine. I added in the pork then let it reduce a little more. Served over rice.
