So I'm watching an episode of Brew Masters and they're saying it takes them ten days to brew an ale. Why can he/dogfish brew an ale in ten days when it takes me three weeks at home?

We got a case of the Infinium for my bar. We're only selling it at midnight on New Year's Eve. Supposedly our distributor is coming by tomorrow with another bottle for us to sample. I'll let you know what I think as soon as I sample it.

It sounds really interesting, its a 10.3% ABV beer that had a secondary fermentation with champagne yeast. So it should exhibit champagne qualities even though it was brewed in accordance with Reinheitsgebot. In essence it is a whole new beer category.

Tried Infinium- had a crisp clean, slightly fruity beer flavor. It definitely seemed like a beer-champagne hybrid. It was still unmistakably beer with a fizziness champagne like quality. Also, it's almost 22 proof, so it's a rather strong beer. Out of 5 stars, I'd give it about 3.75.

Thanks for the input. I saw a commercial for Infinnium, and both Mrs. Boots and I turned our nose up at the idea. I must say, I am curious, though. Maybe my brothers and I will experiment over the holidays.

As a follow up to your review, would this be a "special occasion only" beerpagne? It seems that its emergence near New Years indicates it's just another Sam Adams seasonal marketing attempt rather than a serious pioneering attempt for the crossover strain. I'm not knocking Sam Adams seasonals, because I definitely enjoy some of them, but I wouldn't put it past SA to throw out a brew or two for shock value/novelty. If nothing else, the bottle is one I wouldn't mind having in my collection.

Yours or anyone else's thoughts?

I can do a beer in 10 days. 14 days easy.. why 3 weeks for you? I'm going to keg two batches tonight that I brewed last sunday, 12/12, they'll be ready to drink by Sat. that's about 13 days.

it all depends on how long you wanna keep in primary. some guys do like 4 weeks min.. I personally don't see the need. 10-20 days is plenty for me.

I still follow the 1,2,3 rule. One week primary, two weeks secondary, three weeks in the bottle. So, it's really six weeks before I can drink.

I tried a porter in the 2nd for only 1 week and it came out over carbonated.

Screw secondaries. Go 10-21 days in primary then keg/bottle. I think racking to a secondary fermenter is a huge waste of time and energy.

CAVEAT - if you are racking to a secondary to open up a primary fermenter for your next batch then go for it.

10-21 days is a pretty big gap. How do you know if you need 10 or 21 days? Checking the gravity?

I very rarely check gravity until right before I keg, unless it is a big beer (over 1.06 OG). My typical sched is 21 days in primary then keg. However, for a 1.04ish extract beer I'll go 14 days then keg. I could probably keg one of those around 10 days, I just never have.

From my post on the general board. Shiner Dortmunder is the same thing as Shiner Frost from last year - just renamed. However, I did discover a new altbier brew coming from Shiner in the future.

I had the Shiner Alt this week. It was in the place of Kosmos Reserve in a Family Pack.

I liked it. A bit sweet but I am no expert on that style.

Just bought a 12 pack of the Family Reunion - Kosmos Reserve is still in the pack - absent is Shiner Light

Good, Shiner Light might be the worst beer I've ever had.

I wish Shiner would brew a real bock... or a pale ale... or an IPA... or a Porter... or a Stout....

Most all their beers are better than Bud, Miller & Coors; but they are pretty bland when compared to some of the better craft breweries around.

Isle, yeh gravity kind of determines how long I go. The wheat beers for my wife I'll just do ~12 days. a bigger ipa for me I'll go 3 weeks.

Just finished phase 1 of my keezer. (on the left, fermentation chamber is on right)


For phase 2, this week I'm going to go get 2 more faucets, and I'm on the hunt for some gas QD's so I can have my tank outside the keezer and have an easy way to take it if need be. That will complete it for now.. I have the room for 6 faucets if I ever think I need em. Probably add a drip tray and some chalkboard paint up on top.



On tap:
strong american wheat (7.5%)
german wheat
black IPA
american pale
strong irish red (7.5%)

Need to do another to fill my pipe line. I might experiment with something I hadn't done, since I have plenty beer to last a while.

Yeah, upon thinking about it, you're right. Maybe they shouldn't, because they don't do it that well IMO. Most of their beers just seem a little bit bland to me.

I was in Paris (TX) the other day. Stopped for lunch downtown at a burger joint called Jaxx Burgers. To my surprise they had a wall of taps behind the bar. I counted 21 different beers and not a BMC among them. They also had a cooler full of other imports and craft beers.

The burger was nothing special but I did savor it with a DFH 90min.

Pretty impressive for a small town IMHO.
