For context, in BCS, they're doing $2.6MM in alcohol sales, so likely somewhere in the ball park of $7-9MM in total sales. That's in the bottom quarter of stores in Texas for the chain. Even if this entity fails, the chain would get purchased and continue operation.
Sprouts requested and received permits on January 23rd for signage for the building. I know there was some chatter they weren't moving forward.

The Penny is opening their temporary leasing office in Century Square in what was Clean Juice I believe. Not exciting, but just in case see work there.
Also, Aki Sushi, which has been planned to go in the old FedEX/Kinkos location off University next to Insomnia Cookies, has permitting for additional work in the parking lot area. So, I guess they still plan to open there. It has been an eyesore for a while.

Last week around that time they had wait times of an hour. Now, I have my doubts about Trackside as they whittled down their hours a few times but they've been there for at least a year at this point. The question comes down to how long the lease was, the prospects at five years in, and second location ideas. I remember "CharlieMac" had a second location chosen for Primo Pizza had it been successful.

It wasn't just the winter storm and the break, my sarcasm-loving friend, they cut back hours permanently at least twice over the last 18 months.

Sounds to me that in their time at that location they have looked back on sales during certain time periods and adjusted to only be open when it makes sense. Or cents, as it were.
This isn't a new business strategy. Family had a business on The Strand in Galveston for years. They looked weekly at sales for previous years during that same time period on the calendar to see what to expect. It was a strong predictor of what to expect.
As a result, they closed for Beach Party/Kappa weekend (as a lot of businesses do in Galveston), and they also closed during Lone Star Bike Rally weekend. They didn't get sales during those events in the past so no reason to stay open.
Trackside hasn't been on South Holleman a long enough time to have a lot of data. I'm not surprised they have adjusted hours.
