My favorite nickel and dime tactic is charging for the "whiskey cube" of ice for your whiskey instead of just the normal chunks. Blew my mind the first time it happened to me at The Canteen years ago. Now more and more places do it.
Well you know that recipe requires more work to make that big of an ice cube.
