Were you one of the people that messaged me and needed a "simple birthday cake" for Thanksgiving or within a few days of Thanskgiving? Or at ring day? Or most Saturdays?
There are certain days that are more likely to be booked by bakers. Any holiday, any major event with TAMU, the entire month of December, most Saturdays during wedding season. For me, Thanksgiving and December have been fully booked for months with regular customers that order for holiday parties every year. And I'll add thatwhatmost people consider a "simple cake" is often far from simple. Even just a perfectly smooth cake, which seems like it would be super easy to do, can take hours to get perfectly level with crisp edges, no bubbles, no lines, etc.
I can often accommodate last minute orders (inside of 2 weeks), but there are certain times of the year where it simply isnt possible. There are also occasionally certain customers that you can tell will be a headache, and its just easier to pass on the order.

There are plenty of options in BCS to get a same day cake or even same week cake- but people dont want grocery store cakes. There are an abundance of cottage bakers in the area that can generally even fo same week or a few days notice. But there are also a lot of entitled customers that I simply won't do business with. For example, here are some of the top "complaints" I have gotten this year:
I dont see why you cant decorate a cake and 6 dozen cupcakes by tomorrow, the grocery store can!
Why can't I just buy one custom gender reveal cupcake? Seems like a bad business model.
I dont care if its your kid's birthday! You are a business and im placing an order for that day! (I didn't take their order)
(After giving my price) Would you take $30? Thats what HEB was going to charge.

In my experience, if you feel that this area is in desperate need of good bakers, you are likely a customer most of us avoid (and yes, most of us know each other and talk to each other- I will even refer out to other bakers if I cant do the order)
