My wife makes a black bean and corn salsa that is very similar to pico, and tastes much better than pico.
I think the point is…. It's *not* pico…
This is like the beans in chili argument. I couldn't care less what it's called. I like corn salsa more than pico and use it in all the same ways.
But when the menu says pico, most people don't expect/want corn salsa. They are different dishes.
But there are still numerous instances of corn in pico. It's not like it's an unheard of addition by any means. It wouldn't be the first restaurant to change up traditional ingredients.
